However, I typically use steel-cut oats and am curious how the texture and taste might differ when soaked overnight as opposed to traditional cooking methods. Overnight steel-cut oats definitely keep their texture! Try soaking with a bit less liquid to maintain that chewiness you like. They'll soften, but still have a hearty bite.

I've tried soaking steel-cut oats overnight. The texture remains chewy, but the oats are less dense. Give it a try!

I've soaked steel-cut oats overnight! They soften but retain some chewiness. Try it with a 1:3 oats to liquid ratio. Add toppings in the morning!
